Heather of Girlichef, though an expert in Mexican cooking, has never dabbled in Puerto Rican food before! As such, she thought she would go all-out for this month's challenge. When Kelly of It's A Food Life went on a cruise to the Caribbean three years ago, her ship stopped at San Juan. Where was the first place she and her husband went once ashore? A Bacardi Factory. No lie. It is at once sweet, salty, spicy, and absolutely mind-blowing. I kind of want to eat it every day for the rest of my life.<br />

Firstly because Wedding Crashers had been playing constantly on TBS the week before. Next up, let's make our way East with a trip to...VIETNAM!<br /><br />Vietnamese cuisine is typically admired for its emphasis on healthy and fresh ingredients. It can be broken up into three categories, based on the region it is from. Northern Vietnamese food is probably most similar to what you would expect to find in a Vietnamese restaurant, as northern Vietnam was the cradle of Vietnamese culture. It gave rise to popular dishes such as pho and banh cuon or a rolled cake. Southern Vietnamese food, in contrast, was greatly influenced by the Chinese and French and so it tends to emphasize sweeter flavors and utilizes a wider variety of herbs. Central Vietnamese cuisine veers from the aforementioned two in that it typically consists of a lot of smaller dishes...kind of like a Vietnamese tapas. While it is terrible that it took such a traumatic event to bring Haiti to the world's attention, Haiti is now, finally, being given some much-deserved help and attention.<br /><br />As such, it made sense to me to choose Haiti as one of our countries for Regional Recipes, seeing as how I knew so little about it's history, culture, or cuisine. Here is what I learned.<br /><br />Haitian cuisine is typically very similar to that of French Creole/Cajun but with a Caribbean twist, drawing on the many tropical fruits and vegetables that grace its shores. Haitian dishes are spicy, often using peppers, such as the Scotch Bonnet Chili Pepper, and bold seasonings to flavor it. Adrift in the winds of bloggerdom.)<br /><br />But what <span style="font-style: italic;">is </span>Regional Recipes, you ask?<br /><br />It's a blogging event that celebrates food from all over the world! Each month a region will be selected and people should post a recipe originating from that area. Submissions should be for a particular dish or should spotlight a particular ingredient that is widely used and somewhat unique to that region. To make it really interesting, I think participants should give some background about the dish or ingredient. By background, I’m not thinking just facts, but maybe a little story. Give us some context. Why is this dish great? How did you come upon it? During your travels? Did a friend make it for you? Your mom taught it to you? That type of stuff.<br /><br />Here are the rules.<br /><br />The Rules:<br />1. Make a dish, write it up and include a picture. I really think pictures give people an idea of what the dish should look like and convince them why they should try it.<br /><br />2.
